Not yo Mama's pork roast.

Its 4:05 PM and the pork roast has been in the crock pot since 10. I can't stand it. The smell is incredible. I found this recipe while glancing through an old cookbook my mom gave me. I love to read cookbooks and never try any of the recipes. Do you ever do that? Yeah. It's sad. I know.

BUT- while planning my weekly menu I made the resolve to stop reading and start doing! So this is the first of my probably sad attempts to actually cook!

Chipotle Pork Roast- grab your crock pot!
2 tablespoons chili powder
1 teaspoon salt
1 teaspoon garlic powder
2 teaspoons ground cumin
9 sm. unpeeled red potatoes, quartered
4 sm. sweet potatoes, peeled, quartered
1 medium onion, cut into 3/4-inche wedges
1 boneless pork shoulder (I used a Boston Butt roast. I love the name)
2 tablespoons olive oil (as a rub)
1 can (8 oz) tomato sauce (scored it on sale for $.29)
1 can (14.5 oz) diced tomatoes, undrained
1 canned chipotle chile in adobo sauce (I was afraid of the Mexican cooking aisle)
2 tablespoons water
2 tablespoons cornstarch

Spray your crock pot with non-stick cooking spray. In a large bowl, combine chili powder, salt, garlic powder and cumin. Add in potatoes, onion and coat with the spices. Put the veggies in the slow cooker. With the olive oil, rub the roast (feels slimy, eww.) Then coat with the remaining spices in the bowl. Toss that slab of meet in the pot. Pour on the tomato sauce, tomatoes and 1 or 2 of the chilies. Let that bad boy cook for 6-8 hours. Resist the tempting smells if you can. I dare you.
Once the pork is done, remove the veggies and meat, cover to keep warm. Pour sauce from the cooker in a medium sauce pan. In a small bowl, mix water and cornstarch; stir into sauce. Cook for 5 to 10 minutes, stirring until thick. Serve along side the crock-pot fiesta, and OLE!

After the arrival of the Ring Leader the table was set on our feasting began. I was so glad to hear him say that this is a repeater sometime in the future. If you get the courage to try it...leave a comment! It was NOT spicy either. Just for you mild mouthed folks!

  4. Just cooked this tonight for dinner. My hubby says it was great, and it's a thumbs up for a second round. He loves hot food, and since we live near the border of Arizona/Mexico, I thought I would be spicy, and put three chipotle peppers in it. wow! I cried during the meal, my hubby on the other hand didn't think it was very hot.
